  4. @ Kristen - Yeah, this was a really good cake ... reminded me of a flourless chocolate torte as far as the consistency goes ... very moist towards the center of the cake with a nutty consistency from the almond flour. The mascarpone cream was awesome and made for an interesting taste 'aha!' ... looks like whipped cream but explodes in your mouth with subtle sweetness and rum flavors...

    I LOVE the ingredients oh so Italian and the mascarpone is lovely with it. PLEASE cut me a slice as I try to get a floight over.

  7. Oh, Susan, this looks wonderful. I love the carrots in there--I was expecting this to have polenta in it! This is now on my 'try it immediately!' list.

    Interestingly, I made a gluten-free tea cake recently. It would have been great with this marscapone cream.
