  3. I've missed 'two words' nice to have it back. I am thoroughly in love with your kitchen. It is fabulous. And what a wonderful thanksgiving spread. Awesome awesome roast. Having never brined a bird, tell me, is it worth it?

  4. @ Dom- It was soooo worth it ... brining the bird, that is! I'll post the brine I used in the next day or two ... as Christmas is coming and the goose is getting fat! The turkey has such a wonderful moist texture and it's NOT too salty, which concerned me a bit ... the skin got such a gorgeous golden color and was crisped right up ... and I only basted twice, but kept it tented with foil for most of the roast time. One thing though, the brine smelled weird to me and I was agonizing over it every time I went to 'roll the bird' a bit. All's well that ends well, though! Perfect! Today the carcass is simmering on the woodstove for a soup stock ... still smells heavenly!
