Apple-Cranberry Streusel Pie

My pie obsession continues to grow, as I find more tempting filling recipes for a couple of pie crusts. But wait, sometimes it's just as tasty to plop a filling into a pie shell and top the whole mess with a crunchy streusel!




... meet Apple-Cranberry Streusel Pie ...


I made this pie yesterday and it was such a temptation that it never made it whole to the dinner table! SB and I had an unexpected visit from our friend, Amy and since it was just about kaffeetrinkenzeit and since it was still warm from the oven ... well, you know we cut into it!




The rest of the pie went under wraps until dinner dessert time ... served with ice cream. OMG ... so good! This streusel pie recipe will make it to the Thanksgiving table this year. It's so incredibly simple to make and so tasty that it would be a crime to set the recipe aside for too long. In fact, I think I will be making it for one of our little church suppers this fall too!




Apple Cranberry Streusel Pie

Makes: 1 shallow 9-inch pie

Pie Crust Ingredients:

1 c. flour
½ tsp. salt
A generous ⅓ c. vegetable shortening
About 4 tbsp. ice cold water

Filling Ingredients:

4 medium apples, peeled, cored, and sliced into thin wedges (I used Golden Crisps, this time)
1 can of whole berry cranberry  sauce
¾ c. light brown sugar (sugar can be decreased depending on the sweetness of the apples)
1 ½ tbsp. cornstarch
¼ tsp. cinnamon

Streusel Ingredients:

¾ c. flour
6 tbsp. light brown sugar
6 tbsp. old-fashioned oats
½ tsp. cinnamon
6 tbsp. butter, melted


Making the Pie:

  1. Mix the flour and salt together in bowl.
  2. Cut the shortening into the dry mix using two knives until the mix is crumbly and mealy-looking.
  3. Add the ice water a tablespoon at a time, tossing with a fork to make a crust that just holds together.
  4. Wrap the crust in plastic wrap and chill.
  5. Make the streusel by tossing all the ingredients together with a fork in a small bowl until crumbly. Set aside.
  6. Slice the apples into a clean bowl and add the cranberry sauce and brown sugar. Toss to distribute and break down the sugar a bit.
  7. Add the cornstarch and cinnamon and toss to combine. Set aside.
  8. Preheat the oven to 350° F
  9. Sprinkle a rolling surface with flour and roll out the chilled crust. Press into the bottom of a shallow 9-inch pie plate.
  10. Mound the apple and cranberry mixture into the pie pan and place the pie on a rimmed cookie sheet.
  11. Bake for 20 minutes.
  12. Remove from the oven and sprinkle the streusel mixture over top the apples.
  13. Return to the oven for another 20 minutes or until the streusel is golden brown and the crust edges are crisp and golden brown.
  14. Cool slightly before cutting and serving with ice cream or whipped cream.

  1. Oh yes! I can understand your joy for this pie. I bet the sweetness of the apples was perfectly offset by the sharpness of the cranberries. Gorgeous topping too.
