You stir it into the dish at the table and the heat of the pasta cooks the egg to a really nice silky texture. I also put two or so TBSP of the hot cream mix into the eggs first to warm them up and then turn them into the rest of the cream sauce and whisk, whisk, whisk!<br /><br />@ Susan - asparagus would be fantastic!
