The pie was stellar looking - yes? But WAIT! It was far too soupy, which leads me to a burning question -
DOES ANYONE OUT THERE IN BLOG WORLD KNOW THE PROPER RATIO OF CORNSTARCH TO BERRY FRUITS THAT WILL PRODUCE A SMOOTH FILLING SAUCE THAT DOES NOT RUN ALL OVER THE PLACE WHEN THE PIE IS CUT ???????
While everyone at yesterday's 4th celebration raved about the flavour of the pie, this baker was wishing she could get a piece cut and transferred intact to the waiting plate ... so I'm sending my plea out there ...

I can't help you with the filling, but I'm always of the opinion the taste matters most and if your pie eaters were happy, that's what's important. Hope you had a lovely day.
ReplyDeleteI use instant tapioca in my blueberry pies and it works every time. Plus, you don't notice it is there. The tapioca box will give you the proper ratio.
