Sunshine In A Cookie - Oatmeal Spelt Cookies with Pineapple, Coconut, and Cashews



Coconut, cashews, dried pineapple chunks ...all folded into an oatmeal cookie dough that is made with spelt flour. This, my latest effort to see if what I'm having problems with is highly processed all purpose flours. This, after having had a similar cookie at a vegetarian restaurant over the weekend made with spelt flour (with no reaction on my part after knoshing). Hmmm ... I plan to push the envelope on this one a bit and test the theory. That means I'll have more than one cookie ( read three)  in a serving and see if I have a reaction.

A New Twist on Hawaiian Pizza



This weekend's pizza was totally interesting ! Take a traditional tomato-based pizza and turn it on its ear! Hawaiian pizza has always seemed really exotic and kind of weird to me, but my brother-in-law raves about it! Whenever the guys have their poker parties at the family farm, Dan likes to order a Hawaiian number to split with the rest of the guys. So I've slowly come around to the idea of trying a pie decked out with ham and pineapple.

Peanut Crusted Chicken with Pineapple Salsa

 
 
This month is National Peanut Butter Month, apparently! Oh, the lowly peanut ... such a humble little legume that sits squarely at the center of so many paperbag lunches, crinkles in many a bag at the ballgame, and gets munched on many a transcontinental flight. I've joined a small group of folks that intend to do more sophisticated things with the peanut, however. I scoured the Cooking Light website and found a tasty peanut-crusted chicken appetizer, as a starter for the Virtual Supper Club's peanut- themed feast.
