Salted Caramel Cashew Pie

Sometimes you just need to have a good piece of pie. If said pie is easy to make and can be stashed away in the ice box for a time to perfect itself AND stay out of sight until the dinner party, all the better. It makes that moment when you pull it out of the icebox and look at all that beauty ALL the better.

So here it is ... in all its glory ... Salted Caramel Cashew Pie.

Madeleines and Apricot/Mango Iced Cream



Desserts in the grey cottage have been few and far between of late. Madeleines, though, have such a cachet for me that I couldn't resist making them as a special treat for SB and I. To boot, I found a lovely iced cream recipe in Diana Henry's latest cookbook, A Change of Appetite that I had to try!

Grasshopper Pie !

Chocolate and mint is always a winning combination in my humble opinion! Looking at this Grasshopper Pie gives me the shivers ! It may be cold, but what I'm really shivering about is the idea that it has that magic combo ... I get the same feeling when I break into a sleeve of Girl Scout Thin Mint cookies or pull the top off the cookie jar and find a trove of Pseudo Thin Mint Cookies waiting for a raid. This pie, though, is just a tad more dramatic than the humble cookie jar ...

I sooo wanted to include this dessert as a topper for our Virtual Supper Club dinner menu, but it's hardly 'light cooking' ... so I'm tagging it along after this month's supper club post. This is an easy and totally yummy dessert ... and it couldn't be easier!

Frozen Mocha Cheesecake

Every once in a while, I take a trip down memory lane. I have a huge bag of clippings, recipe cards, notes from friends, and magazine articles that all have foods that I've made and loved. The collection goes back over the thirty-plus years of my married life and come to think of it, even farther. It goes back to the college years when I first got an apartment with a bunch of wild young women. In those days, we would have parties on Friday nights that always began with pans of lasagna or big pots of chicken soup or dueling crockpots of stews and chilis. Then there would be some easy dessert left on the counter or pulled from the fridge. The first time I made this easy cheesecake was for one of those Friday night debauchery scenes.

Summertime Flavours ... Cinnamon-Basil Ice Cream



Silent Bob is the biggest fan of ice cream that I have ever known. He has been known to sit down with an entire half-gallon and slurp his way blythely toward the bottom of the container before being shamed into saving some for others. He's an ice cream fiend!

Since summer is on its way I got thinking about his ice cream cravings.  So, this week, when we made our pilgrimage to the town library, I brought home a book devoted to ice cream and cold desserts. I've been leafing though it for the past few days, bookmarking yummy ice cream, sorbet, and sherbet recipes.
