Kale Salad with Apples, Cranberries and Roasted Butternut Squash



Thoroughly 'massaged' kale ribbons, fresh Pink Lady apple chunked and soaked in lemon juice, dried cranberries, pumpkin seeds, roasted cubes of butternut squash, a small handful of Feta cheese  and there you have last night's dinner.

Kale Pesto



Okay. You can turn your nose up, if you want to, but we had great pasta (and far too much of it!) last evening! This was the first time that I've made kale pesto ... and I used a recipe from Diana Henry's a change of appetite cook book. It's a 'healthy recipe', so it didn't have nuts of any sort in it. I think that when I make it again, I'll try it with walnuts and a bit more olive oil than the amount that she stipulates. This batch was really yummy ... and bright green. I used the full measure of kale and I subbed spinach leaves in instead of parsley. That worked just fine ... it needed generous salt and black pepper too.

So ... kale pesto over pasta ... next time I'm making it with Udon noodles and slivers of hot chili pepper.

Okay, so this New Hampshire hick is settling in for the winter months with her stash of Christmas cook books and her every present bouquet of  ... kale. Yup. Kale. It's what's for dinner during the winter up here in the wilds of New England - green, cheap, plentiful, healthy, and ever present, mounded up in the produce section at the local markets.

The Summer Kitchen ... in Winter



I went for a ride yesterday and then parked and walked in the woods for a bit ... before the roar of snowmobiles let me know that I was about to be engulfed by engines and exhaust and the spinning of metal belts and flinging of mud and snow. Then, I retreated back down the path and on further down the road.


There was a yeasted whole wheat crust rising at the house, so I was on a bit of a time table for walking, but it sure was a pretty day for a quick jaunt.


I found this summer kitchen sitting next to an old house down the road ... what colors next to the whites and greys of winter woods!  The light in the woods was really wonderful because of the cloud cover ...

Minestrone Soup with Tortellini



There is nothing better than soup for supper! With fresh bread alongside, it just can't be beat for the end of a busy day. And the kicker is ... when you make a big pot of soup, you can have leftovers for lunch for the next couple days ... mmm! Am I right? Huh? Huh?

I call these frost feathers and they are especially beautiful this morning! Every window in the upper story of the grey cottage is decked out with different patterns. The temperature was -8°F … that’s -22°C for those who use the Celsius measurements.

Pork Tenderloin on a Bed of Kale with Roasted Sweet Potatoes on the Side



Why have I never shared these roasted  'taters' with you guys? These are so very easy and savory ... not your usual smushed sweet potatoes and not super crisp and fatty sweet potato fries ... instead, thick half rounds with a bit of olive oil to keep the crisp outsides moist and to allow for crunchy crisp nuggets of garlic, thyme, and red pepper to flavour them.
